A few things set gelato apart from ice cream. First and foremost gelato uses much less cream, therefore contains less fat and gets less hard when frozen. The other is the manufacturing process. Gelato is made in artisan equipment with intense craftsman intervention. Much less air is added to the mix, resulting in a denser product with loads more flavour.
